Mexican Street Corn Soup

A delicious and creamy soup inspired by the flavors of Mexican street corn, featuring sweet corn, spices, and a hint of lime.

Ingredients

  • 4 cups fresh corn kernels (or frozen)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro, for garnish
  • Crumbled cotija cheese, for garnish

Instructions

  1. In a large pot, sauté the diced onion and minced garlic until translucent.
  2. Add the corn kernels, chili powder, cumin, salt, and pepper, and cook for a few minutes.
  3. Pour in the vegetable broth and bring to a boil.
  4. Reduce heat and let simmer for 15 minutes.
  5. Using an immersion blender, blend the soup until smooth (or blend in batches in a regular blender).
  6. Stir in the heavy cream and lime juice, and heat through.
  7. Serve hot, garnished with fresh cilantro and crumbled cotija cheese.

Notes

  • For a spicier version, add diced jalapeños.
  • This soup can be made ahead of time and reheated before serving.
  • For a vegan version, substitute heavy cream with coconut cream and use vegetable broth.
