Micro-Herb Infused Spring Pea Soup

Ingredients

  • 2 cups fresh spring peas
  • 1 cup vegetable broth
  • 1/2 cup onion, chopped
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/4 cup micro-herbs (such as basil, cilantro, or parsley)

Instructions

  1. In a pot, heat olive oil over medium heat and sauté the chopped onion until translucent.
  2. Add minced garlic and sauté for another minute.
  3. Stir in the fresh spring peas and vegetable broth, bringing the mixture to a boil.
  4. Reduce heat and let it simmer for about 10 minutes until the peas are tender.
  5. Remove from heat and blend the soup until smooth.
  6. Season with salt and pepper to taste.
  7. Stir in the micro-herbs just before serving for a fresh flavor boost.

Notes

  • For a creamier texture, add a splash of cream or coconut milk.
