  • 1/3 cup melted butter
  • 1/2 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter into the mashed bananas.
  4. Add the sugar, beaten egg, and vanilla extract, and mix well.
  5. Sprinkle the baking soda and salt over the mixture and mix in.
  6. Finally, add the flour and stir until just combined.
  7. Fill the mini muffin cups about 2/3 full with the batter.
  8. Bake for 10-12 minutes or until a toothpick inserted into the center comes out clean.
  9. Let them cool for a few minutes before transferring to a wire rack.
