Mini Cherry Cheesecakes

Delicious mini cherry cheesecakes with a graham cracker crust and creamy filling.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 can cherry pie filling

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. Mix graham cracker crumbs and melted butter. Press into the bottom of each liner.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla.
  4. Pour filling over crusts, filling each cup 3/4 full.
  5. Bake for 20 minutes or until set. Cool completely.
  6. Top with cherry pie filling before serving.

Notes

  • Chill for at least 2 hours for best texture.
  • Use room temperature cream cheese for smoother filling.
