  • 2 medium eggplants
  • 1/4 cup miso paste
  • 2 tablespoons soy sauce
  • 2 tablespoons maple syrup
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
  • Sesame seeds for garnish
  • Chopped green onions for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the eggplants into 1-inch thick steaks.
  3. In a bowl, mix together the miso paste, soy sauce, maple syrup, sesame oil, rice vinegar, ginger, and garlic.
  4. Brush the miso mixture generously over both sides of the eggplant steaks.
  5. Place the eggplant steaks on a baking sheet lined with parchment paper.
  6. Bake for 25-30 minutes, flipping halfway through, until the eggplants are tender and caramelized.
  7. Garnish with sesame seeds and chopped green onions before serving.

Notes

  • For a spicier version, add chili flakes to the miso mixture.
