Miso glazed eggplant steaks are a savory, umami-rich dish. They make a great vegetarian main or side.

Ingredients

  • 2 medium eggplants, sliced into 1-inch thick steaks
  • 3 tbsp white miso paste
  • 2 tbsp mirin
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tbsp sesame oil
  • 1 clove garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp toasted sesame seeds
  • 2 scallions, thinly sliced

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Arrange eggplant steaks on the baking sheet. Brush both sides with sesame oil.
  3. Roast for 15 minutes, flip, then roast another 10 minutes.
  4. Whisk miso, mirin, soy sauce, vinegar, sugar, garlic and ginger in a bowl.
  5. Brush glaze on eggplant steaks. Broil 2-3 minutes until caramelized.
  6. Garnish with sesame seeds and scallions before serving.
