1 cup dried lentils
1/2 cup chickpeas, soaked overnight
1 large onion, finely chopped
2 tomatoes, diced
2 tbsp tomato paste
1/2 cup celery, chopped
1/2 cup cilantro, chopped
1/2 cup parsley, chopped
1 tsp ginger
1 tsp turmeric
1 tsp cinnamon
1/2 tsp black pepper
6 cups water or broth
2 tbsp olive oil
Salt to taste
Instructions
Heat olive oil in a large pot over medium heat.
Add onions and sauté until translucent.
Stir in tomatoes, tomato paste, celery, cilantro, and parsley.
Add lentils, chickpeas, and spices.
Pour in water or broth and bring to a boil.
Reduce heat and simmer for 45 minutes until lentils are tender.
