  • 4 (8 oz) packages cream cheese, softened
  • 4 large eggs

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in vanilla extract and sour cream until fully incorporated.
  7. Pour the cream cheese mixture over the crust in the springform pan.
  8. Bake for 60-70 minutes or until the center is set but slightly jiggly.
  9. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  10. Refrigerate for at least 4 hours before serving.
