No bake lotus cheesecake

A delicious and creamy no-bake cheesecake made with Lotus Biscoff cookies, perfect for dessert lovers.

Ingredients

  • 200g Lotus Biscoff cookies
  • 100g unsalted butter, melted
  • 400g cream cheese
  • 200ml heavy cream
  • 100g powdered sugar
  • 1 tsp vanilla extract
  • Lotus Biscoff spread for topping

Instructions

  1. Crush the Lotus Biscoff cookies into fine crumbs.
  2. Mix the cookie crumbs with melted butter until well combined.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In a bowl, beat the cream cheese until smooth.
  5. Add the heavy cream, powdered sugar, and vanilla extract, and mix until well combined and fluffy.
  6. Pour the cheesecake mixture over the crust and smooth the top.
  7. Refrigerate for at least 4 hours or until set.
  8. Before serving, top with Lotus Biscoff spread and additional cookie crumbs if desired.

Notes

  • For a firmer cheesecake, refrigerate overnight.
  • Can be garnished with whipped cream or fresh fruit.
  • Store leftovers in the refrigerator for up to 3 days.
