  • 1 cup unsweetened applesauce
  • 1/2 cup almond milk
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

  • 1/2 cup chopped apples
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the rolled oats, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, combine the applesauce and almond milk.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the chopped apples and nuts if using.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack.
