  • 1/2 cup rolled oats
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil
  • 1/2 cup dried fruit (e.g., cranberries, apricots)
  • 1/4 cup chia seeds
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large bowl, combine sunflower seeds, pumpkin seeds, rolled oats, dried fruit, chia seeds, and salt.
  3. In a small saucepan, heat honey (or maple syrup) and coconut oil over low heat until melted and combined.
  4. Remove from heat and stir in vanilla extract.
  5. Pour the wet mixture over the dry ingredients and mix until well combined.
