A healthy and delicious twist on traditional banana bread made with oat flour.

  • 2 cups oat flour
  • 3 ripe bananas, mashed
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix the mashed bananas, honey (or maple syrup), melted coconut oil, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together the oat flour, baking soda, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • This bread can be frozen for up to 3 months.
