One-pan lemon herb chicken and orzo

A delicious and easy one-pan meal featuring lemon herb chicken and orzo pasta, perfect for a weeknight dinner.

Ingredients

  • 4 chicken thighs
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken thighs with salt, pepper, oregano, and thyme.
  3. Add chicken to the skillet and cook until browned on both sides, about 5-7 minutes per side.
  4. Remove chicken from the skillet and set aside.
  5. In the same skillet, add minced garlic and cook for 1 minute until fragrant.
  6. Add orzo, chicken broth, lemon juice, and lemon zest to the skillet.
  7. Stir to combine and bring to a boil.
  8. Reduce heat to low, return chicken to the skillet, cover, and simmer for 15-20 minutes until orzo is cooked and chicken is done.
  9. Garnish with fresh parsley before serving.

  • For extra flavor, marinate the chicken in lemon juice and herbs for a few hours before cooking.
  • Feel free to add vegetables like spinach or cherry tomatoes for added nutrition.
