One-Pot Chicken and Rice

A simple and delicious one-pot meal featuring tender chicken and flavorful rice, perfect for a quick dinner.

  • 1 lb chicken thighs, boneless and skinless
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Add chicken thighs and cook until browned on both sides.
  4. Stir in rice, chicken broth, paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat to low and cover.
  6. Cook for 20 minutes or until rice is tender and chicken is cooked through.
  7. Stir in frozen peas and cook for an additional 5 minutes.
  8. Remove from heat and let sit for 5 minutes before serving.

Notes
