One-pot creamy chicken wild rice soup

A hearty and creamy one-pot chicken wild rice soup that’s easy to make and packed with flavor.

  • 1 lb boneless, skinless chicken breasts
  • 1 cup wild rice
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp butter
  • 2 tbsp flour

Instructions

  1. In a large pot, melt butter over medium heat. Add onion, carrots, celery, and garlic. Cook for 5 minutes.
  2. Add chicken breasts, wild rice, chicken broth, thyme, salt, and pepper. Bring to a boil.
  3. Reduce heat, cover, and simmer for 30 minutes or until rice is tender.
  4. Remove chicken, shred it, and return to the pot.
  5. Whisk flour into heavy cream and stir into the soup. Simmer for 5 minutes until thickened.
  6. Serve hot.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Substitute heavy cream with half-and-half for a lighter version.
  • Add mushrooms for extra flavor.
