One Pot Lasagna Soup is a quick and delicious meal that combines all the flavors of traditional lasagna in a comforting soup form, perfect for busy weeknights.

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 8 oz lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add chopped onion and minced garlic, cooking until softened.
  3. Stir in crushed tomatoes, broth, and Italian seasoning. Bring to a boil.
  4. Add broken lasagna noodles and cook until tender, about 10 minutes.
  5. Stir in ricotta cheese and half of the mozzarella cheese until melted and combined.
  6. Serve hot, topped with remaining mozzarella and Parmesan cheese.
