Organic Spelt Flour Berry Scones

Delicious scones made with organic spelt flour and fresh berries, perfect for breakfast or a snack.

  • 2 cups organic spelt flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup mixed berries (blueberries, raspberries, or strawberries)
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the spelt flour, sugar, baking powder, and salt.
  3. Add the cold, cubed butter to the flour mixture and mix until it resembles coarse crumbs.
  4. Gently fold in the mixed berries.
  5. In a separate bowl, combine the milk and vanilla extract.
  6. Pour the milk mixture into the dry ingredients and stir until just combined.
  7. Turn the dough onto a floured surface and knead gently a few times.
  8. Pat the dough into a circle about 1 inch thick and cut into wedges.
  9. Place the scones on the prepared baking sheet and bake for 15-20 minutes or until golden brown.
  10. Let cool slightly before serving.

Notes

  • For a sweeter scone, increase the sugar to 3/4 cup.
  • Feel free to substitute the berries with your favorite fruits.
  • These scones are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
