Ingredients

  • 1 cup almond flour
  • 2 eggs
  • 1/2 cup almond milk
  • 1 tbsp honey
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tbsp coconut oil (for cooking)

Instructions

  1. Mix almond flour, eggs, almond milk, honey, vanilla extract, and salt in a bowl.
  2. Heat coconut oil in a non-stick pan over medium heat.
  3. Pour a small amount of batter into the pan and swirl to form a thin crepe.
  4. Cook for 2 minutes, then flip and cook for another minute.
  5. Repeat until all batter is used.
  6. Stack the crepes and serve with fresh fruit or a drizzle of honey.

Notes

  • Use a thin spatula to flip the crepes carefully.
  • Adjust sweetness by adding more or less honey.
