Ingredients

  • 1 lb chicken breast, diced
  • 4 cups chicken broth
  • 2 cups vegetables (carrots, celery, and bell peppers)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Add diced chicken breast and cook until browned.
  4. Stir in the vegetables and cook for another 5 minutes.
  5. Pour in the chicken broth and add thyme, rosemary, salt, and pepper.
  6. Bring to a boil, then reduce heat and let simmer for 20-25 minutes.
  7. Adjust seasoning if necessary and serve hot.
