Paleo Instant Pot Chicken

A quick and easy Paleo-friendly chicken dish made in the Instant Pot.

Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 cup chicken broth
  • 1 tbsp lemon juice

Instructions

  1. Set the Instant Pot to sauté mode and heat olive oil.
  2. Season chicken thighs with salt, pepper, garlic powder, and paprika.
  3. Sear chicken thighs for 2 minutes per side.
  4. Add chicken broth and lemon juice.
  5. Close the lid and cook on high pressure for 10 minutes.
  6. Allow natural release for 5 minutes, then quick release remaining pressure.
  7. Serve hot.

Notes

  • Use fresh lemon juice for best flavor.
  • Adjust seasoning to taste.
  • Store leftovers in an airtight container for up to 3 days.
