Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 3 eggs
  • 1/4 cup honey or maple syrup
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the pumpkin puree, eggs, and honey or maple syrup.
  3. In another bowl, combine the almond flour, coconut flour, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  5. Pour the batter into a greased loaf pan.
  6. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool before slicing and serving.
