Chipotle Mayo:

  • ½ cup mayonnaise

  • ½ tablespoon sugar

  • 2 tablespoons chipotle peppers in adobo sauce, pureed

  • 1 lime, juiced

Sandwich:

  • 2 small asiago cheese focaccia breads, cut into 8 sandwich-size slices

  • Olive oil (for brushing)

  • 12 slices smoked turkey breast

  • ½ red onion, thinly sliced

  • 1 cup arugula or mixed greens

  • ½ avocado, sliced

Instructions

  1. In a small bowl, mix the mayonnaise, sugar, pureed chipotle peppers, and lime juice until fully combined. Set aside.

  2. Lightly brush the asiago cheese focaccia with olive oil and toast until golden and crisp.

  3. Spread chipotle mayo on the inner sides of each bread slice.

  4. Layer with smoked turkey, red onion, avocado slices, and arugula.

  5. Close the sandwich, press gently, and slice to serve.
