Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) cannellini beans, drained
  • 4 cups vegetable broth
  • 1 cup ditalini pasta
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups fresh spinach
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Set the Instant Pot to sauté mode and heat olive oil.
  2. Add onion, carrots, celery, and garlic. Sauté for 3 minutes.
  3. Stir in diced tomatoes, beans, broth, pasta, oregano, basil, salt, and pepper.
  4. Close the lid and set to manual high pressure for 5 minutes.
  5. Quick release pressure, then open the lid.
  6. Stir in spinach until wilted.
  7. Serve topped with Parmesan cheese if desired.

Notes

  • For a thicker soup, mash some of the beans before adding.
  • Store leftovers in the fridge for up to 3 days.
  • Substitute kale for spinach if preferred.
