Pasture-Raised Chicken with Spring Garlic

  • 1 whole pasture-raised chicken (about 45 lbs)
  • 1 cup spring garlic, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, halved
  • Fresh herbs (such as thyme or rosemary) for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the chicken and pat it dry with paper towels.
  3. In a bowl, mix the chopped spring garlic, olive oil, salt, and black pepper.
  4. Rub the garlic mixture all over the chicken, including under the skin.
  5. Place the lemon halves inside the cavity of the chicken.
  6. Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for 10 minutes before carving.
  8. Garnish with fresh herbs and serve.
