  • 1 onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can (28 ounces) crushed tomatoes
  • Salt and pepper to taste
  • 4 pasture-raised eggs
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced onion and bell pepper, cooking until softened.
  3. Stir in the minced garlic, cumin, paprika, and cayenne pepper, cooking for another minute.
  4. Add the crushed tomatoes, season with salt and pepper, and simmer for 10 minutes.
