Delicious peanut butter and jelly cheesecake bars that combine creamy cheesecake with a sweet jelly topping, perfect for dessert lovers.

Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1/2 cup peanut butter
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup jelly or jam of your choice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined.
  3. Press the mixture into the bottom of a greased baking dish to form the crust.
  4. In another bowl, beat together cream cheese, peanut butter, sugar, and vanilla until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Pour the cheesecake mixture over the crust in the baking dish.
  7. Drop spoonfuls of jelly on top of the cheesecake and swirl with a knife.
  8. Bake for 25-30 minutes or until set.
  9. Let cool, then refrigerate for at least 2 hours before cutting into bars.

Notes

  • For a gluten-free version, use gluten-free graham crackers.
  • Feel free to use any flavor of jelly or jam you prefer.
  • These bars can be stored in the refrigerator for up to a week.
