Rich, fudgy peanut butter stuffed brownies with a creamy peanut butter filling, melted chocolate chips, and the perfect blend of brown sugar and cocoa. These butter stuffed brownies taste like a peanut butter cup in every bite and are a must-try for any chocolate lover.

  • 1 cup (250g) smooth peanut butter
  • 1 tsp salt flakes, divided
  • 200g (14 tbsp) unsalted butter
  • 1 1/4 cups (200g) dark chocolate chips
  • 1 cup loosely packed brown sugar
  • 3 large eggs, lightly beaten
  • 1 tsp vanilla extract
  • 1/2 cup plain flour
  • 1/4 cup cocoa powder
  • 1/8 tsp salt

Instructions

  1. Grease and line a 20cm/8″ square pan with baking paper.
  2. Warm peanut butter (except 2 tbsp) for 30 seconds in microwave, pour into pan, spread, sprinkle half the salt, and freeze 2–3 hours.
  3. Remove the frozen slab and place it back in freezer on parchment.
  4. Line pan again with baking paper.
  5. Preheat oven to 350°F (180°C).
  6. Melt butter and chocolate chips in microwave-safe bowl (90 seconds total). Stir until smooth.
  7. Add brown sugar, eggs, and vanilla extract. Mix well.
  8. Stir in flour, cocoa powder, and kosher salt until smooth.
  9. Pour half the batter into the pan, top with frozen peanut butter filling, and add remaining batter.
  10. Drizzle remaining 2 tbsp peanut butter on top and swirl with a knife.
  11. Bake for 32 minutes. Center should jiggle; edges firm.
  12. Cool in pan for 1 hour, refrigerate for 3 hours, then slice and serve.

Notes

Use creamy sandwich-style peanut butter for best texture. Always allow brownies to cool completely to prevent the filling from oozing. Store in an airtight container at room temperature for up to 4 days or freeze for later.
