Pecan Pie Cheesecake

A rich and creamy cheesecake with a pecan pie topping.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 cup chopped pecans
  • 1/2 cup corn syrup
  • 1/4 cup brown sugar
  • 1 tbsp butter

Instructions

  1. Preheat oven to 325°F.
  2. Mix graham cracker crumbs and melted butter. Press into a 9-inch springform pan.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla.
  4. Pour over crust. Bake for 45 minutes.
  5. Combine pecans, corn syrup, brown sugar, and butter in a saucepan. Cook for 5 minutes.
  6. Spread topping over cheesecake. Bake for 10 more minutes.
  7. Cool completely before serving.

Notes

  • Chill for at least 4 hours before serving.
  • Store leftovers in the refrigerator.
