Peppermint Chocolate Thumbprint Cookies

  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1 large egg
  • 1 teaspoon peppermint extract
  • 1/2 cup crushed peppermint candies
  • 1/4 cup semi-sweet chocolate chips, melted

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk flour, cocoa powder, baking soda, and salt.
  3. In another bowl, beat butter and sugar until fluffy. Add egg and peppermint extract.
  4. Gradually mix dry ingredients into wet ingredients until combined.
  5. Roll dough into 1-inch balls, then roll in crushed peppermint candies.
  6. Place on baking sheet and press your thumb into the center of each.
  7. Bake for 10-12 minutes. Cool on a wire rack.
  8. Fill thumbprints with melted chocolate. Let set before serving.
