Pesto Orzo Bake

A simple and flavorful pasta dish combining orzo with homemade pesto, baked to perfection.

Ingredients

  • 1 cup orzo
  • 2 cups fresh basil leaves
  • 1/4 cup pine nuts
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook orzo according to package instructions, then drain.
  3. In a food processor, blend basil, pine nuts, Parmesan, garlic, olive oil, salt, and pepper until smooth.
  4. Mix the pesto with the cooked orzo.
  5. Fold in cherry tomatoes.
  6. Transfer to a baking dish and top with mozzarella.
  7. Bake for 15 minutes or until cheese melts.

Notes

  • Use gluten-free orzo if needed.
  • Store leftovers in an airtight container for up to 3 days.
