- 8 oz salmon fillet
- 8 oz pasta (penne or spaghetti)
- 1/4 cup pesto sauce
- 2 tbsp olive oil
- 1 clove garlic (minced)
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp lemon juice
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Season salmon with salt and pepper.
- Heat olive oil in a pan over medium heat. Add salmon and cook for 4-5 minutes per side.
- Remove salmon, flake into pieces, and set aside.
- In the same pan, sauté garlic for 30 seconds.
- Add cooked pasta, pesto, and lemon juice. Toss well.
- Gently mix in flaked salmon.
- Serve warm.
