Pioneer Woman Potato Soup

A creamy and comforting potato soup recipe inspired by Pioneer Woman, perfect for chilly days.

Ingredients

  • 6 slices bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 6 medium russet potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 cup shredded cheddar cheese
  • 2 green onions, sliced

Instructions

  1. Cook bacon in a large pot over medium heat until crispy. Remove and set aside.
  2. In the same pot, sauté onion and garlic until softened.
  3. Add potatoes, chicken broth, salt, pepper, and thyme. Bring to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  5. Use a potato masher to partially mash the soup for thickness.
  6. Stir in heavy cream, milk, and half of the cooked bacon. Heat through.
  7. Serve topped with shredded cheese, remaining bacon, and green onions.

Notes

  • For a smoother texture, blend half the soup.
  • Store leftovers in the fridge for up to 3 days.
  • Substitute half-and-half for heavy cream if desired.
