  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 cup pistachio nuts, finely chopped
  • 2 tablespoons pistachio paste
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  5. Add the vanilla extract, lemon juice, and pistachio paste, mixing until well combined.
  6. In a separate bowl, whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
  7. Stir in the chopped pistachios.
  8. Pour the cheesecake filling over the crust and smooth the top.
  9. Bake for 50-60 minutes or until the center is set.
  10. Allow to cool, then refrigerate for at least 4 hours before serving.

Notes

  • For a stronger pistachio flavor, increase the amount of pistachio paste.
  • Garnish with additional chopped pistachios or whipped cream before serving.
  • This cheesecake can be made a day in advance for better flavor.
