2 cups all-purpose flour
4 large eggs
2 1/2 cups milk
1/4 cup melted butter
1/2 cup sugar
1 teaspoon vanilla extract
1 cup pistachio paste
2 cups heavy cream
1/4 cup powdered sugar
Chopped pistachios for garnish
Instructions
In a bowl, whisk together flour, eggs, milk, melted butter, sugar, and vanilla extract until smooth.
Heat a non-stick skillet over medium heat and pour a small amount of batter to form a thin crepe.
Cook for about 1-2 minutes on each side until lightly golden, then transfer to a plate.
Repeat until all batter is used, stacking the crepes on the plate.
In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form.
Fold in the pistachio paste gently into the whipped cream until well combined.
To assemble, place one crepe on a serving plate, spread a layer of pistachio cream on top, and repeat with remaining crepes.
Chill the assembled cake in the refrigerator for at least 4 hours or overnight.
Before serving, garnish with chopped pistachios.
Notes
Ensure the crepes are completely cooled before layering.
For a richer flavor, use high-quality pistachio paste.
This cake can be made a day in advance for better flavor.
