  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar (for filling)
  • 1/4 cup pistachio paste
  • 1 teaspoon rose water (for filling)

Instructions

  1. Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a bowl, sift together almond flour and powdered sugar.
  3. In a separate bowl, beat egg whites until foamy, then add cream of tartar and gradually add granulated sugar until stiff peaks form.
  4. Gently fold the almond flour mixture into the egg whites, adding pistachio extract and food coloring if desired.
  5. Pipe small circles onto the prepared baking sheets and let them sit for 30 minutes to form a skin.
  6. Bake for 15-20 minutes, then let cool completely.
  7. For the filling, beat softened butter with powdered sugar, pistachio paste, and rose water until smooth.
  8. Pipe the filling onto the flat side of one macaron and sandwich with another macaron.
  9. Let the assembled macarons rest in the fridge for at least 24 hours before serving for the best flavor.
