  • 2 cups diced potatoes

  • 1 cup chicken broth
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F.
  2. Heat olive oil in a skillet and brown pork chops on both sides.
  3. Layer potatoes, carrots, onion, and garlic in a baking dish.
  4. Place pork chops on top.
  5. Pour chicken broth over the dish.
  6. Sprinkle thyme, salt, and pepper.
  7. Cover with foil and bake for 45 minutes.
  8. Remove foil and bake another 15 minutes.
