  • 1 cup black beans
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Place chicken breast in the crock pot.
  2. Add black beans, quinoa, and vegetable broth.
  3. Season with olive oil, garlic powder, cumin, salt, and pepper.
  4. Cook on low for 6 hours.
  5. Shred chicken and mix well before serving.
