Pumpkin Coconut Curry Ramen

A creamy and flavorful pumpkin coconut curry ramen with a hint of spice. Perfect for a cozy meal.

  • 1 tbsp vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp red curry paste
  • 1 can (14 oz) coconut milk
  • 1 cup pumpkin puree
  • 2 cups vegetable broth
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 2 packs ramen noodles (discard seasoning packets)
  • 1 cup spinach
  • 1 lime, juiced
  • Fresh cilantro, for garnish

Instructions

  1. Heat oil in a pot over medium heat. Add onion, garlic, and ginger. Cook until softened.
  2. Stir in red curry paste and cook for 1 minute.
  3. Pour in coconut milk, pumpkin puree, vegetable broth, soy sauce, and brown sugar. Simmer for 10 minutes.
  4. Add ramen noodles and spinach. Cook until noodles are tender.
  5. Stir in lime juice. Serve hot, garnished with cilantro.

Notes

  • Adjust spice level by adding more or less curry paste.
  • Use butternut squash if pumpkin is unavailable.
  • Top with tofu or shrimp for extra protein.
