Pumpkin Cream Cheese Bars

Deliciously moist pumpkin bars swirled with creamy cheese, perfect for fall.

  • 1 cup pumpkin puree
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 egg yolk

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, mix together pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  5. In a separate bowl, beat the cream cheese, powdered sugar, and egg yolk until smooth.
  6. Pour half of the pumpkin batter into the prepared pan, then dollop the cream cheese mixture on top.
  7. Pour the remaining pumpkin batter over the cream cheese layer and swirl with a knife.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool before cutting into bars and serving.

Notes

  • Store leftovers in an airtight container in the refrigerator.
  • These bars can be frozen for up to 3 months.
  • For added flavor, consider adding chocolate chips or nuts to the batter.
