Delicious and creamy pumpkin-parmesan polenta squares that are perfect as a side dish or appetizer.

  • 4 cups vegetable broth
  • 1 cup pumpkin puree
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. In a saucepan, bring the vegetable broth to a boil.
  2. Slowly whisk in the polenta, stirring constantly to prevent lumps.
  3. Reduce heat and cook for about 20 minutes, stirring frequently until thickened.
  4. Stir in the pumpkin puree, Parmesan cheese, and heavy cream until well combined.
  5. Season with salt and pepper to taste.
  6. Pour the mixture into a greased baking dish and spread evenly.
  7. Let it cool and set for about 30 minutes.
  8. Preheat the oven to 400°F (200°C).
  9. Cut the polenta into squares and place them on a baking sheet.
  10. Bake for 20-25 minutes until golden and crispy on the edges.
  11. Garnish with fresh herbs if desired and serve warm.
