Pumpkin S'mores Cookies

Soft and chewy pumpkin cookies with a gooey marshmallow and chocolate center, inspired by classic s’mores.

  • 1 cup pumpkin puree
  • 1/2 cup unsalted butter (softened)
  • 1 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup chocolate chips
  • 1 cup mini marshmallows
  • 1/2 cup graham cracker crumbs

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream butter and brown sugar until smooth.
  3. Add pumpkin puree, egg, and vanilla extract. Mix well.
  4. In another bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing until combined.
  6. Fold in chocolate chips and mini marshmallows.
  7. Scoop dough onto the baking sheet and flatten slightly. Sprinkle graham cracker crumbs on top.
  8. Bake for 12-15 minutes or until edges are golden.
  9. Let cool before serving.

Notes

  • Do not overmix the dough to keep cookies soft.
  • Store in an airtight container for up to 3 days.
  • For extra gooeyness, add more marshmallows before baking.
