Pumpkin S’mores Cookies

Delicious pumpkin-flavored cookies with a s’mores twist, perfect for fall gatherings.

  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1/2 tsp salt
  • 1 cup graham cracker crumbs
  • 1 cup mini marshmallows
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until smooth.
  3. Add pumpkin puree, egg, and vanilla extract. Mix well.
  4. In a separate bowl, whisk flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  5. Gradually add dry ingredients to wet ingredients. Stir until combined.
  6. Fold in graham cracker crumbs, mini marshmallows, and chocolate chips.
  7. Drop tablespoon-sized dough portions onto the baking sheet, spacing them 2 inches apart.
  8. Bake for 12-15 minutes or until edges are golden.
  9. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

  • Store in an airtight container for up to 5 days.
  • For crispier cookies, bake for an extra 2 minutes.
