  • 1/2 tsp salt
  • 1 cup canned pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F. Line a muffin tin with cupcake liners.
  2. Mix flour, baking powder, baking soda, spices, and salt in a bowl.
  3. In another bowl, whisk pumpkin, sugars, oil, eggs, and vanilla.
  4. Combine wet and dry ingredients until just mixed.
  5. Divide batter evenly into the cupcake liners.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Cool completely before frosting.

Notes
