Pumpkin Spice Sugar Cookies

  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp pumpkin spice
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk flour, baking soda, salt, and pumpkin spice in a bowl.
  3. Cream butter and sugar until light and fluffy. Beat in egg and vanilla.
  4. Gradually mix in dry ingredients until combined.
  5. Scoop dough into balls and place on baking sheets. Flatten slightly.
  6. Bake for 10-12 minutes until edges are golden.
  7. Cool on baking sheets for 5 minutes, then transfer to wire racks.

Notes

  • Store in an airtight container for up to 5 days.
  • Dough can be refrigerated for 30 minutes for easier handling.
