Quinoa Avocado Power Salad

A nutritious and filling quinoa avocado salad packed with protein, healthy fats, and fresh vegetables. Perfect for a quick lunch or a light dinner.

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water and drain.
  2. In a saucepan, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes. Fluff with a fork.
  3. In a large bowl, combine cooked quinoa, avocado, cherry tomatoes, cucumber, red onion, and cilantro.
  4. Drizzle with olive oil and lemon juice. Season with salt and pepper.
  5. Toss gently to combine and serve immediately.

Notes

  • Store leftovers in an airtight container in the fridge for up to 2 days.
  • Add grilled chicken or chickpeas for extra protein.
  • For a spicy kick, add a pinch of red pepper flakes.
