Quinoa Salad

A healthy and nutritious quinoa salad packed with fresh vegetables and a light dressing.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water and drain.
  2. Bring quinoa and water to a boil in a saucepan.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let it sit for 5 minutes.
  5. Fluff quinoa with a fork and let it cool.
  6. In a large bowl, combine cooled quinoa, cucumber, bell pepper, red onion, and parsley.
  7. Whisk together olive oil, lemon juice, salt, and pepper.
  8. Pour dressing over the salad and toss to combine.
  9. Serve chilled.

Notes

  • You can add feta cheese for extra flavor.
  • Store leftovers in an airtight container for up to 3 days.
