Quinoa Tabbouleh with Herbs

A fresh and healthy quinoa tabbouleh packed with herbs and vegetables.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 3 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Rinse quinoa under cold water.
  2. Cook quinoa with water in a saucepan for 15 minutes.
  3. Fluff quinoa with a fork and let it cool.
  4. In a large bowl, mix quinoa with cucumber, tomatoes, red onion, parsley, and mint.
  5. Whisk lemon juice, olive oil, salt, and pepper in a small bowl.
  6. Pour dressing over the salad and toss gently.
  7. Serve chilled.

Notes

  • You can add feta cheese for extra flavor.
  • Store leftovers in an airtight container for up to 3 days.
