Raspberry almond yogurt tarts are a delightful dessert that combines the tanginess of yogurt with the sweetness of raspberries and the nuttiness of almonds.

  • 1 cup almond flour
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons honey or maple syrup
  • 1/4 teaspoon salt
  • 1 cup Greek yogurt
  • 1/2 cup fresh raspberries
  • 1 teaspoon vanilla extract
  • 1 tablespoon sliced almonds for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix almond flour, melted coconut oil, honey, and salt until combined.
  3. Press the mixture into the bottom of tart pans to form the crust.
  4. Bake the crusts for 10-12 minutes or until golden brown.
  5. In another bowl, combine Greek yogurt, raspberries, and vanilla extract.
  6. Once the crusts have cooled, fill them with the yogurt mixture.
  7. Top with sliced almonds and additional raspberries if desired.
  8. Chill in the refrigerator for at least 1 hour before serving.

Notes

  • For a vegan option, substitute Greek yogurt with a plant-based yogurt.
  • Feel free to use other berries if raspberries are not available.
  • These tarts can be made a day in advance and stored in the refrigerator.
