Raw Manuka Honey Granola

A delicious and nutritious granola made with raw Manuka honey, perfect for breakfast or a snack.

  • 2 cups rolled oats
  • 1 cup nuts (almonds, walnuts, or pecans)
  • 1/2 cup seeds (pumpkin or sunflower)
  • 1/2 cup dried fruit (raisins, cranberries, or apricots)
  • 1/2 cup raw Manuka honey
  • 1/4 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine rolled oats, nuts, seeds, dried fruit, cinnamon, and salt.
  3. In a small saucepan, melt coconut oil and raw Manuka honey together over low heat.
  4. Remove from heat and stir in vanilla extract.
  5. Pour the honey mixture over the dry ingredients and mix well until everything is evenly coated.
  6. Spread the mixture onto a baking sheet lined with parchment paper.
  7. Bake for 20-25 minutes, stirring halfway through, until golden brown.
  8. Allow to cool completely before storing in an airtight container.

  • Feel free to customize the nuts and dried fruits to your liking.
  • Store in a cool, dry place for up to two weeks.
  • This granola can be enjoyed with yogurt, milk, or on its own as a snack.
