Raw-Vegan Avocado and Lime Mousse

A creamy and refreshing dessert made with ripe avocados and zesty lime, perfect for a raw-vegan diet.

  • 1/4 cup fresh lime juice
  • 1/4 cup maple syrup or agave nectar
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut milk
  • Pinch of salt

Instructions

  1. Cut the avocados in half, remove the pit, and scoop the flesh into a blender.
  2. Add lime juice, maple syrup, vanilla extract, coconut milk, and salt to the blender.
  3. Blend until smooth and creamy, scraping down the sides as needed.
  4. Taste and adjust sweetness or lime juice as desired.
  5. Transfer the mousse to serving dishes and refrigerate for at least 30 minutes before serving.
  6. Garnish with lime zest or fresh mint if desired.
